Guest guest Posted December 12, 2003 Report Share Posted December 12, 2003 Well, let's see, there's kibbi - made with ground sirloin, wheat, onions, pine nuts, and spices. there are grape leaf rolls - made with rice, ground meat, tomatoes, onions, and spices. there are meat pies - made with (you guessed it) meat, pine nuts, and spices. Those are the top three. To that I also have laban (yogurt), salata (salad with a mint, lemon juice, olive oil dressing), tabouli, pita bread, spinach pies, and desserts. Thoughts? Paula J. - Hmmmmm. Alternatives to what, exactly? (I don't know - and would like to- what would be a trad Xmas Eve meal). I haven't had kibbi in years, but we used to love it back when I was eating & cooking meat. I worked for a Lebanese family several years ago & the mom in the family had shared a few recipes with me. One of the recipes she had shared was a beans & rice one (green beans, rice, tomato, lamb & spices), and I recently tried making something similar to it using a ground beef alternative. It didn't turn out half bad...am wondering if you could use an alternative for things like the stuffed grape leaves & " meatpies " . I don't know how a soy alternative would work with something like kibbi, since the meat is the main ingredient in it. Oh, I'd love to come to your place for Christmas Eve dinner....can just imagine the wonderful smells. Instead, I'll be smelling LUTEFISK!! Guest guest Posted December 13, 2003 Report Share Posted December 13, 2003 I put my mind to your menu problem last thing last night (yeah - picture that, eh? *lol*) and I thought tvp and then thought, No, that'd only work for vegetarians unless it was a recipe that took very little meat. I sometimes chop mushrooms very fine, saute them until they are only around, say, a third of their original volume (in other words, the water has gone out of them), then mix them with plain tvp that I have reconstituted using (not plain boiling water but) vegetable stock plus a little tamari or, even better for some things, Braggs. Then I use *that* mixture, of half and half mushrooms and half reconstituted tvp, as if it were ground/minced me*t. It works great in roll-up thingies, moussaka, pastries, etc. I don't know how it would go in recipes that require you to simmer them - I imagine the tvp would lose some of that flavour you've put into it with the stock and the tamari? - but it might be worth a small trial sometime. You could of course use pre-flavoured and pre-formed soy me*t and crumble it, but it would of course be more expensive and, more importantly, might have seasonings, flavourings, whatever, in there that are incompatible with the recipe you are attempting to convert to vegan. And I too wish I were coming to your place for Xmas Eve ;=) I haven't quite decided what we are having here - there will be just my husband and myself this year - but I think it will be as far away from traditional holiday fare as we can get!
