About seeding, juicing, peeling tomatoes: some people find some tomato seeds bitter, likewise the skins, and even if they're not some prefer not to find curled up bits of skins in their food. Now me, I like food to look natural, so unless it's a very fancy dish that depends on its being *smooth* I don't usually bother either. In this case, when I try your nutroast recipe, I'll halve and seed/juice the tomatoes to see if that solves the problem you had ;=) About the eggs: I would use egg replacer myself, because we are following a vegan diet these days, but hey unless you used *giant* humungous eggs one egg should replace one 'egg replacer' shouldn't it? *lol* About making ahead and leftovers: lots of dishes are improved by standing for a day (or more) - blends the flavours. I wonder if this dish would freeze satisfactorily? Yes, it's a problem cooking for one - or even, I might add, cooking for just two people with small appetites. (Okay, *great* appetites but small stature so need smaller portions *lol*) Total Sympathy!
