HTH warm regards Niccii * Exported from MasterCook * Cheesy Spinach Pesto serves 4-6 Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces spinach -- chopped 1/2 cup water -- hot 1/2 cup lowfat cottage cheese 2 tablespoons basil -- dried 1/4 cup parmesan cheese 2 cloves garlic Thaw and drain spinach well. Combine all ingredients in a blender or food processor and process until smooth. You may add additional water one tablespoon at a time if necessary to blend. Freeze in quart size freezer bags or 3 cup freezer containers. To Serve: Thaw the pesto thoroughly. Warm over low heat on stove or in microwave.
