Guest guest Posted August 7, 2003 Report Share Posted August 7, 2003 Fat Free Lentil Soup! from Vegetarian Resource Center - vrc - Boston, USA http://www.ivu.org/recipes/greek/fat.html This recipe is made with no added fat and the ingredients all have a negligible amount of fat if any! 2 Cups dried Lentils 1 Cup finely chopped onion 1 1/2 t garlic powder or 1t granulated garlic (there is a difference) 1/4 t ground black pepper 1T Ground Cumin 1/2 Cup diced Celery 1 Cup diced Carrot Dump all of the ingredients in a stock pot with 8 cups of water bring mixture to a rolling boil and lower heat to a light boil. let cook until lentils are tender, and mixture thickens a little; approximately 40-45 minutes. Salt to taste. I like this one because it's an easy one to prepare and it cooks on the burner while you are doing other things, making it a real time saver too!
