Raspberry Cream Cheese Coffeecake

Haven't tried this one yet (just got it) but it sounded good so, I

thought I'd share right away. Does any one have any brands of soy

cream cheese or sour cream they'd like to share??

 

 

Raspberry Cream Cheese Coffeecake

 

Cake:

 

2 1/4 cups flour (GF blend if desired)

3/4 cup sugar

3/4 cup coconut butter

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup soy sour cream

1 tsp almond extract

flaxseed gel to make one egg

 

Filling:

 

8 oz. soy cream cheese

1/4 cup sugar

flaxseed gel to make one egg

3/4 cup raspberry jam

1/4 cup sliced almonds

 

Preheat oven to 350F. In a large bowl, combine flour and 3/4 cup

sugar.

Using pastry blender, cut in coconut butter until mixture resembles

coarse

crumbs.

Reserve 1 cup of crumbs.

 

To remaining crumb mixture, add baking powder, baking soda, salt,

sour

cream, almond extract, and flaxseed gel. Blend well. Spread batter

over bottom

and

1 1/2 inches up sides of greased and floured 9 inch spring-form pan.

Batter

should be about 1/4 inch thick on sides.

 

In a small bowl, combine cream cheese, 1/4 cup sugar, and 1 egg.

Blend well.

Pour in batter lined pan. Spoon jam over cream cheese mixture.

 

In a small bowl, combine reserved crumbs and sliced almonds. Sprinkle

over

jam. Bake for 45

to 55 minutes.

what is flax seed gell haven't heard that one before. Is it like emes geletan unflavored? And do you have to use coconut butter. The health food stores near me donot sell alot of things. It does sound good.

This recipe was adapted to be vegan so, I'm sure if your lacto-ovo

you can replace w/ regular butter and eggs or since it's for baking

try the egg replacer. I had found this for my brother who is lactos

intolerent. Good luck and I'll let you know if I find any other

sources for these items. :-)
