This one's a little high in carbs but????

 

 

Veggie Heroes with Herb Mayonnaise

6 servings—Dairy-free

 

·Herb Mayonnaise

·1/2 cup soy mayonnaise

·1/4 cup minced fresh herbs of your choice (try a combination of

basil, dill and parsley)

·1 Tbs. minced fresh chives or scallion

·1 tsp. grainy mustard

·1 small clove garlic, minced (optional)

·6 individual hero rolls (6 to 7 inches) preferably whole-grain

·4- to 6-oz. pkg. soy deli slices, cut in half

·2 cups finely shredded lettuce

·2 to 3 ripe medium tomatoes, thinly sliced

·4-oz. jar roasted red peppers in water, drained and thinly sliced

 

Herb Mayonnaise: In small bowl, mix all ingredients until well

blended.Split each hero lengthwise and spread Herb Mayonnaise over

both sides. Divide deli slices among roll bottoms. Divide lettuce,

tomato and pepper slices among roll tops. Sandwich heroes together

and serve.

 

PER sandwich with 1 tablespoon herb mayonnaise: 543 CAL; 34 G PROT; 6

TOTAL FAT (1 SAT. FAT); 89 G CARB.; CHOL; 515 MG SOD.; 11 FIBER

YUMMY :-) I run so don't really worry about having a few extra carbs. Thanks for sharing!
