Guest guest Posted May 20, 2003 Report Share Posted May 20, 2003 Today i decided to make a broth/soup for lunch. Its on the stove at the moment. Its a variation on a simple recipe my mum taught me. Winter vegetable Broth Cut 2 carrots, 2 small potatoes, and 2 parsnips into chunky pieces. Put into a pan of boiling water. Bring back to the boil. add 2 stock cubes, some black pepper and herbs of your choice. This time i chose bay and mint for something a bit different. And i added a splash of worcestershire sauce (veggie of course). Let it boil for about 20-30 mins til veggies are nearly cooked. Chop a handful of green beans into the pan and boil for 3 mins. Add a small tin of butter beans and cook for a further 3 mins. Thicken with onion gravy granules. I choose to leave the soup chunky, like a broth or stew type thing, but you can blend if you choose.
