Vegan low fat Chilli!

Thought i'd share my low fat chilli recipe. I kind of made it up and

i'm trying to remember what i put in it off the top of my head so if

something doesn't seem right let me know ;)

This should make about 4-6 portions. The amounts of each thing are

rough but you can adjust them to suit your taste.

 

I start by chopping a couple of onions and lighly stir frying them

using some 1 cal spray oil. I then add some chopped peppers (red,

green, and yellow) (usually about half to two thirds of each peppers,

depending on their size. Next i add a block of tempeh crumbled up so

its mince like. If i don't have any, i just leave it out, it only

means that the overall bulk of the meal will be smaller... but just

as tasty! I fry that for a few minutes, adding more spray oil as

necessary. If i have an aubergine, i might chop some of that up

small and add it. You lose the texture of it as it cooks right down

but it gives a nice flavour and thick texture to the sauce. Then add

some chopped mushrooms, about 2-3 handfuls usually. Once they are

browned, i add a few chopped fresh tomatoes to give it a fresh

flavour and let them simmer down a bit. Add a tin of tomatoes and a

splash of water and give it a good stir. You can also add a couple

of handfuls of red lentils here, as long as they have 20 mins to 30

mins cooking time in the sauce before you eat them. Next, some

sundried tomatoes, if they are in oil i take 4-5 out and remove most

of the oil with kitchen paper, then chop them and add them. I add a

few cloves of garlic, some tabasco sauce (a few drops), some chilli

powder (1-2 tsp or more if you like it hot!), cumin (2 tsp) and some

liquid smoke (bbq flavour stuff). I also add 2 veggie stock cubes

and, if you have some, i add some mutritional yeast flakes. I leave

it to simmer for a few minutes and then add a tin of kidney beans, a

tin of chickpeas and a few handfuls of sweetcorn. I then simmer it

for a further 3-4 minutes and serve with rice.

If you can get hold of it, fake sour cream goes well with this, or of

course if you're not vegan, normal sour cream.

 

I think thats everything. Of course you can always simplify it to:

veg, kidney beans, tinned tomatoes and chilli powder.

 

I'm feeling hungry now and its only 3.10pm. Might go and munch on a

celery stick!
