To achieve a balanced, healthy vegetarian diet, the American Dietetic Association recommends the following:

Limit the intake of low nutrient-dense foods such as sweets and fatty foods. Choose whole or unrefined grains products instead of refined, or use fortified or enriched cereal products. Eat a variety of fruits and vegetables, including a good food source of vitamin C. Use low-fat or nonfat milk and dairy products. Limit egg yolks to three to four per week. Have a reliable source of vitamin B 12 if you're a vegan. These include fortified commercial breakfast cereals, a fortified soy beverage, or a vitamin B12 supplement each day.
