Vegetable and lentil curry

 

I made a really good curry the other night. I made it up so there's

not a specific recipe, but i started by heating some chilli oil in a

pan. Then i added some chopped chunky veg - courgette, onion,

aubergine, peppers, mushroom - and let them get nicely browned.

Also put in about 1 tsp each of tumeric, garam masala and madras

curry powder, and 2 tsp cumin. Then stir for a moment before adding

a tin of chopped tomatoes. Stir and add a generous 2 handfuls of

lentils. Stir and simmer for about 25 minutes. serve with the

usual, rice, poppadoms, naan or whatever.
