I had a wonderful time in Mexico and had no problem eating veggie..lol....lots of new fruits and veggies..ect....ect... Does anyone here have a cookie recipe filled with sunflower seeds, flax seeds, pumpkin seeds...ect....I hike long distances and thought this would be excellent to take with me in my pack. Thanks so much! I found this on the Internet. It is not Vegan, but it looks good. I am planning to make some to have on hand in case of an emergency. Tari Energy Bars Non-stick cooking spray 1 cup quick cooking rolled oats 1/2 cup all purpose flour 1/2 cup Grape Nuts cereal 1/4 tsp. ground ginger 1 egg, beaten, or eggbeater equivalent 1/3 cup applesauce 1/4 cup honey 1/4 cup packed brown sugar 2 tbsp. cooking oil 16oz. mixed dried fruit bits, chopped if pieces are large 1/4 cup sunflower seeds- plain, not salted 1/4 cup chopped walnuts Preheat oven to 325*. Line an 8x8x2 " baking pan w/aluminum foil. Spray foil with cooking spray. Set pan aside. In a large bowl, combine oats, flour, cereal and ginger. Add egg, applesauce, honey, brown sugar and oil. Mix well. Stir in fruit bits, sunflower seeds and walnuts. Spread mixture evenly in prepared pan. Bake for 30 - 35 min. or until lightly browned around edges. Cool on a wire rack.
