They're 78kcal per cookie so qualify as a snack which is under 100kcal. So thats pretty cool. The trouble with these is that once you've had one you want more! then the calories add up. So be warned make sure you either have heaps of will power or heaps of friends to share them with These are also really good crushed up to make a cheesecake base, they come out pretty dark so they look really cool as a base. You can freeze them too. Low Fat chocolate cookies 140g/5oz plain flour 50g/2oz cocoa powder 1/4 tsp bicarb of soda 1/4 tsp salt 50g/2oz plus 1 tbsp light soft brown sugar 50g/2oz plus 1 tbsp white granulated sugar 50g/2oz unsalted butter at room temp 50g/2oz margerine 1 tsp vanilla extract 1 egg white 1. Combine flour, cocoa, bicarb, and salt and mix well. Combine sugars mixing well with fingers to press out any lumps. 2. Beat butter and marg with whisk of wooden spoon til creamy. Tip in flour and sugar mixtures, vanilla and egg white and beat to form a dough. Shape into a 25cm/10 inch long log (no comment). Wrap in cling film and chill for 45 mins or until needed. 3. Preheat oven to 180c/gas 4. Line 2 heavy baking sheets with non stick parchment or foil. Slice off rounds of dough each about 5mm/quater of an inch thick. Lay an inch apart on the baking sheets. bake for 14 mins. If necessary swap sheets half way or bake lower sheet a bit longer. the cookies will puff and crackle on top and settle when done. Transfer to wire rack with spatula. Leave to cool. Per cookie: 78kcal, 1g protein, 10g carbs, 4g fat, 2g saturated fat, 6g added sugar Enjoy!
