Hi Everyone! Just thought I'd share this one. Mmmmm! Try using light soy sauce or what I do a lot is take and make a veggie broth and add a few tablespoons of soy to that, you get good flavor with a lot less sodium. For fewer calories you can sautee in the veggie broth as well but use a little when cooking the noodles as it will add good flavor to the dish. Let me know what ya think!! P.S. ---------------------Heres a great recipe sent to you fromhttp://fooddownunder.com---------------------Title: Marinated Ginger Tofu Over Crispy Soba NoodlesKeys: Asian Oriental PastaYield: 1---------------------Ingredients:2/3 cup soy sauce2 1/4 cup waterJuice from 1/2 lemon or limeJuice from 1 orange2 tbl minced ginger1 lb firm tofu, cubed and chopped1 lrg onion, coarsely chopped1/2 lrg red pepper, coarsely chopped2 x cloves garlic, minced3 tbl sesame oil, divided use2 stalk celery, cut into 1/2 inch slices3 stalk bok choy, sliced1 x zucchini, quartered and sliced8 oz soba noodles1/2 cup fresh cilantro for garnish, optionalMethod:Mix soy sauce , water, lemon or lime juice, orange juice and mincedginger .Marinate cubed tofu while preparing other ingredients.Preheat oven to 350 degrees. In a large Dutch oven, saute onion , redpepper and garlic in 1 tablespoon sesame oil until golden. Add celery, bok choy and zucchini and mix. Add tofu with marinade and place inoven. Cook 40-50 minutes or until tofu is lightly browned and sauce isbubbly.While tofu is cooking, boil water and cook soba noodles until aldente . Drain and toss with 1 tablespoon sesame oil. Heat last tablespoonsesame oil in a 12 inch non-stick pan and add noodles, spreading to coversurface of pan. Cook until browned on one side. Cut into wedges. Invertwedges onto serving plates.Serve tofu and vegetables over noodles.
