Its making me so hungry i think its time for lunch! Laura Roasted new potato and two bean salad Serves 8 8 tbsp extra virgin olive oil 2 tbsp white wine vinegar 1 garlic clove, finely crushed 1kg/2lb 4oz new potatoes, halved if large 200g/8oz yellow beans (like french beans but yellow) 200g/8oz runner beans 250g punnet cherry tomatoes bunch fresh chives 16 nicoise or other black olives The day before : in screw top jar mix 6 tbsp oil with vinegar, garlic and 1/2 tbsp salt. Store in a cool place but not fridge or it will go cloudy. 3-4 hours ahead: Preheat oven to 200c/gas 6. Toss potatoes in remaining oil, season and roast for 35-40 mins til golden. Cool at room temp. Trim beans and cut diagonally in half. Cook in boiling salted water til tender. Tip into sieve and hold under cold tap til cool. Drain and keep in plastic bag in fridge. 1 hour ahead: Cut tomatoes in half and put in serving bowl with potatoes and beans. Snip chives into dressing, pour over veg and toss well. Season.
