Its so good... just make sure you have some mints for afterwards! Hummus Ingredients 200g/7oz dried chickpeas 1 tsp bicarbonate of soda 100g/3½oz tahini 2 garlic cloves, peeled and crushed 125ml/4½fl oz freshly squeezed lemon juice ½ tsp sea salt freshly ground black pepper extra virgin olive oil paprika and freshly chopped parsley, to garnish Method 1. Wash the chickpeas thoroughly, place them in a dish, cover with water and leave to soak overnight. 2. Rinse the soaked chickpeas thoroughly and place them in a saucepan. Pour over fresh cold water until the water level is 5cm/2in above the chickpeas. 3. Add the bicarbonate of soda. Bring the water to the boil, cover the saucepan and simmer gently for 50 minutes, or until the chickpeas are soft, but not mushy. 4. Drain the chickpeas and then rinse them thoroughly with cold water. Allow to cool before placing them in a food processor, along with the tahini, garlic and lemon juice. Blend until smooth and season with a little sea salt and black pepper. 5. Before serving, drizzle the hummus with olive oil and sprinkle over some paprika and parsley.
