Curried Garbanzo Beans And Potatoes. 2 teaspoons vegetable oil 1 cup diced sweet yellow pepper 1/2 cup finely chopped onion 1 tablesppon plus 1 teaspoon all-purpose flour 1 teaspoon curry powder 1/2 teaspoon salt 1/2 teaspoon ground cumin 1/4 teaspoon pepper 2 1/2 cups water 13/4 cups diced unpeeled round red potato 1 cup peeled, sliced Granny Smith apple 1 cup frozen English peas, thawed 1 (15-ounce) can garbanzo beans, drained 6 cups cooked long-grain rice (cooked without salt or fat) Heat oil in a large nonstick skillet over medium heat. Add yellow pepper and onion; saute 6 minutes or until tender. Sprinkle with flour and next 4 ingredients. Stir well, and cook for an additional 30 seconds. Add 2 1/2 cups water and potato; reduce heat, cover, and simmer 25 minutes or until potato is tender. Add apples, peas and beans; cover and cook an additional 10 minutes. For each serving, spoon 1 cup bean mixture over 1 cup rice. Yield: 6 servings.
