Expect it to serve only four if the appetites are hearty. Vegetable cooking spray11/4 cups fresh corn cut from cob (about 3 ears)1/4 cup chopped green onions11/2 cups frozen egg substitute, thawed1/3 cup skim milk1 1/2 teaspoons minced fresh basil1/8 teaspoon salt1/8 teaspoon pepper2 small tomatoes, cut into 12 wedges1 cup (4 ounces) shredded reduced-fat Cheddar cheeseFresh basil sprigs (optional) Coat a medium nonstick skillet with cooking spray; place over medium-high heat until hot. Add corn and green onions; saute until tender. Combine egg substitute and next 4 ingredients; stir well. Pour egg mixture over vegetables in skillet. Cover and cook over medium-low heat 15 minutes or until mixture is almost set. Arrange tomato wedges near center of egg mixture, and sprinkle with Chedder cheese. Cover and cook a additional 5 minutes or until cheese melts. Cut frittata into 6 wedges. Garnish with fresh basil sprigs if desired, and serve immediately. They look lovely and i will add them to the files very soon. Welcome to all the new members. I think we're growing at a nice rate now Its good to have you all here! I hope you find the group useful. I've had a very busy few days and a busy few days to come, but have found some more recipes to post up when i get a chance to type them. I'll have a look for some indian ones, as requested, too If anyone has any good recipes for their favourite meals (like the things you all mentioned on the questionnaires) it would be great to read them. We have no set formula for typing up recipes, they can be written however you prefer Well, i have to be off for now, wishing you happiness and chocolate!
