Pasta with cherry tomato sauce

 

Serves 4

 

450g/1 lb cherry tomatoes

pinch golden caster sugar

1 onion, chopped

2 garlic cloves, crushed

1 tsp dried oregano

5 tbsp vegetable stock

350g/12oz pasta (penne if poss)

 

Put cherry tomatoes, sugar, onion, garlic, oregano, and stock into a

saucepan, bring to the boil and simmer for 15 minutes over a low

heat. Season to taste.

Meanwhile, cook the pasta in a large pan of lightly salted boiling

water. Drain well, toss with fresh tomato sauce.

 

Per serving 343 kcal, 12g protein, 73g carbs, 2g fat, no saturated

fat, 4g fibre, 1g added sugar, 0.13g salt
