Guest guest Posted February 18, 2003 Report Share Posted February 18, 2003 Summer Veggie Pasta Takes 25-35 mins Serves 4 200g/8oz pasta bows 175g/6oz broad beans 1 tbsp good quality olive oil 1 large onion, finely chopped 2 garlic cloves, chopped 2 large courgettes, cut into sticks 6 ripe plum tomatoes, cut into wedges generous shot of tabasco handful of shredded basil Cook the pasta, adding broad beans for last 3 minutes. Meanwhile, heat oil in a large frying pan, tip in onion and cook over a medium heat for 1-2 mins. Stir in garlic and courgette, toss over a medium heat for 2-3 mins, then stir in tomatoes and tabasco. Stir for 2-3 mins to soften tomatoes a little. Drain pasta and beans. Toss veggies and basil into pasta and season. Serve hot or cold as a salad with low fat dressing.
