Thai twist chunky chilli

 

Serves 8

 

500g precooked and cooled chick peas/3 x 400g cans chick peas drained

1 medium chilli, deseeded and roughly chopped

5 tbsp crumbled feta

8 tbsp roughly chopped coriander, chives and parsley

2 red onions, sliced into rings

125ml cider vinegar

salt and pepper

 

Toss together ingredients and serve!

I like this recipe - quick and easy and tasty and low low low in the

baddies. Looks like lunch to me ;=)
