Wild Rice Salad

 

Serves 6

 

200g cooked wild rice

half red pepper, deseeded and chopped

Half yellow pepper, deseeded and chopped

1 x 400g can sweetcorn

3 medium tomatoes chopped

1 stick celery chopped

6 tbsp sultanas

4 tbsp chopped basil

 

Dressing:

 

3 tbsp cider vinegar

1 tbsp olive oil

1 tsp lemon juice

2 tbsp chooped fresh parsley

1 tbsp sugar

salt and pepper

 

1. For the salad combine all the ingredients.

2. For the dressing, mix all the ingredients and combine with the

salad.
