I always take my lunch to work, since the vegetarian options are extremely limited (or non-existant some days, and you never know when those days are going to happen!) where I work. One of my favourites is roasted veggies. Pretty much every weekend I cook up a roasting pan full of veggies of all sorts, depending on what’s in season and what’s in my refridgerator. I slice up a variety of peppers, eggplant, zucchini and summer squash, asparagus, green beans and whatever else looks good, marinate them briefly with balsamic vinegar and a splash of olive oil and roast them slowly in the oven. They keep well and get tossed into various things during the week, including lunches. Lunch is often a slice or two of some kind of whole grain bread with some spicy brown mustard and a variety of roasted veggies (sometimes livened up with a slice of low or no-fat swiss cheese), along with a container of fat-free yogurt, a piece of fruit, and a bottle of water. Its filling and delicious, and since the veggies are always changing, it doesn’t get boring. Another favourite is spinach salad. I toss baby spinach with low-fat feta cheese, sun-dried tomatoes, croutons (I make my own, so I know they’re low fat), drizzled with a balsamic vinegarette (a splash of olive oil, balsamic vinegar, oregano, basil, marjoram, garlic, fresh black pepper). My roommate adds sliced mushrooms to this too. Baby spinach with mandarin orange slices and a tiny sprinkle of slivered almonds, tossed with a dressing of honey and mustard is great too. Fresh salsa with baked (not fried) pita chips (I make the salsa and chips myself, so I can control what goes into them) is filling and a nice change of pace, especially in the summer when tomatoes are plentiful and flavourful. Since I have access to a microwave, leftovers from earlier in the week often find their way into my lunches as well. Soup is always satisfying, especially with some fresh fruit afterwards. I make a lot of soups, but we also have some great organic, vegetarian, low fat varieties available in the supermarkets.
