Guest guest Posted January 17, 2003 Report Share Posted January 17, 2003 Though I don't have any real measurements (I'm a put in what looks right cook) I have a great recipe for Fat Free, Cholesterol Free Stuffed French Toast. I thought you all might like it. It uses apple juice concentrate instead of butter for the cooking!!! saving you all the calories and other bad things from the butter. It tastes out of this world and smells delish!!!!. you could experiment with other fruits for the filling. it would be a great family breakfast idea when you are the only one in the family "dieting" - after other posts I am afraid to use this word! it is really filling and you don't really have much to feel guilty about after eating it. These are approximate. 1/2 cup strawberries 1/2 cup banana sliced 2 TBS sugar free Strawberry jam 1/2 cup fat free cream cheese one uncut loaf of whole grain wheat bread 1 small container of EggBeaters a little Soy Milk 2 TBS. Apple Juice Concentrate Take a think slice of the bread... much bigger than a normal sandwich slice maybe 1" to 1 1/2" cut a pocket into your big slice it by slicing the bread in the middle almost down to the bottom maybe, 1/2" from the bottom of the bread. Put the cream cheese, strawberries, sliced bananas, jam into a bowl and thoroughly mix (fruit should still be lumpy) Spoon some of the mixture into the wheat bread pockets and close the edges a little so nothing falls out though you don't want to pack these tightly. Dip the toasts into a bowl containing a mixture of the EggBeaters and soy milk. In a skillet, pour a little apple juice concentrate and let it heat up. It will look just like butter. when heated, put in your stuffed toast and brown on both sides like regular French toast. Sprinkling a little powered sugar on top wouldn't hurt at all. You can easily use real eggs for this if you want to but the EggBeaters don't have the cholesterol. I've never had french toast, mainly as it always looks so unhealthy but i'll definitely be trying this! Probably tomorrow morning in fact! I've put it in the breakfast section of our files now.
