Wok-Grilled Chinese Fried Rice

2 eggs

1 tablespoon water

6 teaspoons soy sauce -- or more to taste

3 teaspoons peanut oil

1/4 cup diced onion

1 large carrot -- diced

2 garlic cloves -- minced

4 cups very thinly sliced green or Chinese

cabbage

6 cups cooked white rice

5 tablespoons oyster sauce -- or more to taste

2 cups bean sprouts

1 cup fresh or frozen peas

3 scallions -- chopped (3 to 4)

Fried rice over the grill? In a wok that has holes on the bottom? Am I

crazy? Well, I tried it on a lark and I loved what I tasted. Yes, you do

get some food falling onto the coals, but it's probably the smoke from

these bits burning that adds so much flavor to the dish. Although the dish

cooks a little slower than it would in a restaurant setting, the flavor is

remarkably similar.

 

1. Beat the eggs, water, and 1 teaspoon of the soy sauce.

 

2. Heat 1 teaspoon of the peanut oil in a large skillet or wok over high

heat. Pour in the eggs and swirl the pan over the heat to make a large

omelet. When the bottom has set, flip over and cook on the other

side. Remove from the skillet. Dice into 1/2-inch pieces and set aside.

 

3. Prepare a medium fire in the grill with a lightly oiled grill-wok in place.

 

4. In a large bowl, combine the onion, carrot, garlic, the remaining 2

teaspoons peanut oil, and 1 teaspoon of the soy sauce and toss to coat well.

 

5. Grill the vegetables in the grill-wok, tossing constantly, until the

vegetables are tender, about 2 minutes. Add the cabbage and stir-fry until

limp, about 2 minutes. Add the rice, oyster sauce, and remaining 4

teaspoons soy sauce to the grill-wok. Grill, continuously stirring and

tossing, until the rice is heated through, 4 to 7 minutes.

 

6. Taste and add more oyster sauce or soy sauce, if desired. Carefully

mix in the bean sprouts, peas, scallions, and egg. Grill, carefully

tossing and stirring, until heated through, about 2 minutes. Serve hot.

 

NOTE: Not all oyster sauces have oysters in them, but most have some form

of fish extract. You can find bottles labeled " vegetarian oyster sauce, "

which do not contain any fish extracts.
