Classic Vinaigrette

Amount Measure Ingredient -- Preparation Method

1 tablespoon red wine vinegar

1 clove garlic -- minced

1/2 teaspoon Dijon mustard

3 tablespoons extra virgin olive oil

salt & black pepper

 

In a small bowl, combine the vinegar, garlic, and mustard and whisk until

smooth. Slowly pour in the olive oil and whisk constantly until the oil is

emulsified. Stir in the salt and pepper to taste.

 

Use immediately or store airtight in the refrigerator for up to 2 weeks.

 

VARIATION:

 

Balsamic Vinaigrette: Balsamic vinegar is often the perfect complement to the

sweet smoky flavor of grilled vegetables. Substitute balsamic vinegar for the

red wine vinegar.
