Chinese Barbecue Marinade

1/2 cup hoisin sauce

1/4 cup dry sherry

2 tablespoons soy sauce

2 tablespoons peanut oil

1 tablespoon toasted sesame oil

2 cloves garlic -- minced

1 teaspoon chili paste with garlic

1 teaspoon chopped fresh ginger -- (optional)

 

Combine the hoisin sauce, sherry, soy sauce, peanut oil, sesame oil, garlic,

chili paste, and, if desired, ginger, in an airtight jar and shake well.

 

Use immediately or store airtight in the refrigerator for up to 3 weeks.

NOTES : Chinese hoisin sauce forms the base of this marinade. Hoisin sauce is a
