2 1/4 cups whole wheat pastry flour

1 cup oat bran

1/2 teaspoon salt

1/2 teaspoon baking soda

1 1/2 teaspoons baking powder

1/3 cup nonhydrogenated margarine -- softened

1/2 cup light brown sugar

1 cup hulled finely diced firm sweet -- (about 1/4-inch)

strawberries

1 egg -- beaten

(or substitute the equivalent of Ener-G

egg replacer)

1/2 cup buttermilk or soymilk

 

Makes 16 to 18 scones

 

Scones with fresh fruit baked into them are not common, but the result is

moist and flavorful. Think of these for a rainy late spring afternoon,

once fresh strawberries are available.

 

Preheat the oven to 350 degrees.

 

Combine the first 5 ingredients in a mixing bowl. Cut the margarine into

the dry ingredients with a pastry blender, two knives, or fingertips until

the mixture resembles coarse crumbs. Stir the brown sugar in until evenly

distributed. Toss the strawberries with flour until they are thoroughly

coated and stir gently into the flour mixture.

 

Make a well in the center of the mixture and put into it the beaten egg and

the buttermilk. Work together gently with hands to form a soft dough. If

the dough seems too sticky, add a bit more flour.

 

Form the dough into a round, place on a well-floured board, and

flatten. Roll out to l/2-inch thickness. With a 2-inch round pastry

cutter or a glass, cut 2-inch circles from the dough. Gather up and roll

out scraps until all the dough is used. Arrange the scones on a lightly

oiled baking sheet. Bake for 18 to 20 minutes, or until the tops are

lightly golden. Serve hot.
