Guest guest Posted May 26, 2001 Report Share Posted May 26, 2001 peak of the market * Exported from MasterCook * Italian Style Asparagus Recipe By :Peak of the Market Serving Size : 4 Preparation Time :0:00 Categories : Edited Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces fine egg noodles 1 clove garlic -- peeled 1 pound fresh asparagus -- up to 18 oz 1 tablespoon vegetable oil 1/2 green pepper 1/2 red pepper 1 cup sliced fresh mushrooms 1/2 teaspoon salt pepper to taste 1/2 cup grated swiss cheese 1/2 cup parmesan cheese -- or to taste Cook the noodles as directed on package, adding the clove of garlic to the cooking water. Drain, discard the clove of garlic and rinse noodles under cold water. Wash asparagus and snap off tough end. Cut stalks in 1/2-inch slices on the diagonal. Leave the tips whole. Steam the asparagus on rack in shallow pan over a small amount of boiling water, 6-8 minutes. Meanwhile saute green pepper, red pepper and mushrooms in oil until tender. Mix noodles with sauteed vegetables, steamed asparagus, seasonings and cheeses. Serve immediately.
