Tomato Soup with Rice Shaped Pasta (Orzo)

Amount Measure Ingredient -- Preparation Method

18 ounces ripe tomatoes -- grated

1 carrot -- scraped and sliced

celery

3 cups broth or water -- (6-teacups)

1 tablespoon butter

1/2 cup orzo -- (1 teacup)

finely chopped fresh parsley

salt and black pepper

 

Put broth in pot with tomatoes, carrot, celery, butter, salt and pepper. Boil

and cook for 30 minutes.

 

Take vegetables from pot and puree them.

 

Add pasta and puree to broth and continue cooking for another 8 to 10 minutes on

low heat or until pasta is cooked.

 

Serve this soup garnished with parsley.
