Curried Potato Salad

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 onion -- sliced

1 garlic clove -- minced

1 teaspoon cumin

1 teaspoon coriander

1 mango -- peeled and diced

2 tablespoons sugar

2 tablespoons lime juice

2 pounds red potatoes -- cut into large dice

and boiled until tender

mint leaves

 

Heat oil in large fry pan and cook onion and garlic until soft and brown, about

10 minutes. Stir in cumin and coriander and toss with onions. Add mango, sugar

and lime juice. Continue to cook on low heat, about 5 minutes. Place potatoes in

serving bowl. Spoon onion mixture over top. Garnish with mint.
