Chunky Tomato Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup red wine

1 teaspoon minced garlic

1/2 onion -- cut into wedges

1 carrot -- minced

4 white button mushrooms -- coarsely chopped

1 28 oz can diced tomatoes

1 6 oz can tomato paste

1 teaspoon dried oregano

freshly ground pepper to taste

1 bay leaf

salt to taste

1 dash nutmeg

 

In a medium saucepan over medium-high heat, bring the wine to a boil and saute

the garlic, onion, carrot, and mushrooms until the liquid evaporates. Add the

tomatoes and cook 15 minutes more. Stir in the tomato paste, oregano, and

pepper. Add the bay leaf. Reduce the heat and simmer, uncovered, for 30 to 60

minutes. Stir in the salt and nutmeg. Remove the bay leaf. Serve.

 

VARIATION:

 

For a smoother sauce, finely chop the onion and mushrooms before sauteing.
