Guest guest Posted May 24, 2001 Report Share Posted May 24, 2001 * Exported from MasterCook * Tabouleh With A Twist Recipe By : www.vegkitchen.com 2001 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Grains And Cereals Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup raw bulgur 2 medium firm ripe tomatoes -- diced 20 ounces canned chickpeas -- drained and rinsed 2/3 cup crumbled feta cheese 1/2 cup finely chopped fresh parsley 2 finely chopped scallions -- up to 3 3 tablespoons olive oil 1 large lemon -- Juice of Salt and freshly ground pepper -- to taste Serves: 6 to 8 A Middle Eastern classic and one of my favorite salad meals, this version is made more substantial by adding chickpeas and feta cheese. Bring 2 cups of water to a boil and pour over the bulgur in a heat-proof dish. Cover and let stand 30 minutes of until the water is absorbed. Fluff with a fork and allow to cool to room temperature. Combine with the remaining ingredients in a serving dish and mix well.
