Black Bean, Wild Rice and Corn Soup

Amount Measure Ingredient -- Preparation Method

1 cup chopped onion

1 cup corn -- canned or frozen

1/2 cup finely chopped carrots

1 1/2 teaspoons minced garlic

4 cups vegetable stock

1 19 oz can whole tomatoes

1 cup cooked black beans

1/3 cup wild rice

1 teaspoon ground cumin

1 teaspoon dried basil

3 tablespoons chopped fresh coriander (cilantro)

 

In a large nonstick saucepan sprayed with baking spray, cook onion, corn,

carrots and garlic over medium high heat for 5 minutes or until starting to

brown.

 

Stir in stock, tomatoes, black beans, wild rice, cumin and basil; bring to a

boil, reduce heat to simmer and cook for 35 minutes or until rice is tender.

 

Serve garnished with chopped coriander. Serves 6-8.
