Brown Gravy

Amount Measure Ingredient -- Preparation Method

2 teaspoons safflower or canola oil

1/2 onion -- diced

1/2 teaspoon minced garlic

1/2 cup whole wheat flour

2 cups vegetable stock or water

2 tablespoons low sodium soy sauce or tamari

freshly ground black pepper to taste

 

In a saucepan over medium heat, heat the safflower or canola oil and saute the

onion and garlic until the onion is transparent, about 7 minutes. Blend in the

flour and cook until lightly toasted, about 2 minutes. Reduce the heat. Slowly

add the vegetable stock or water and soy sauce or tamari, and cook, stirring

often, until thickened, about 5 minutes. Add more water as necessary to achieve

desired consistency. Transfer to a serving dish and serve warm.

 

VARIATION:

 

For Mushroom Gravy: Saute 1 cup sliced white button mushrooms in 1 teaspoon of

safflower oil until the mushrooms begin to exude moisture. Stir the sauteed

mushrooms and their juice into the warm gravy.
