Guest guest Posted May 23, 2001 Report Share Posted May 23, 2001 * Exported from MasterCook * Chocolate Brownie Cake Recipe By :The Vegetarian Child, Lucy Moll Serving Size : 0 Preparation Time :0:00 Categories : The Vegetarian Child Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CAKE: 1/2 cup whole wheat flour or unbleached white flour 2 cups unbleached white flour 1 1/2 cups sugar 2 teaspoons baking soda 1/2 teaspoon salt 2 cups water 6 tablespoons safflower or canola oil 2 tablespoons white distilled vinegar 1 teaspoon vanilla extract GLAZE: 1 cup confectioner's sugar 3 tablespoons unsweetened cocoa -- (to 4 tbsp) 2 tablespoons reduced fat soy milk or skim milk -- (to 3 tbsp) Preheat oven to 350ºF. Lightly grease and flour 2 8-inch cake pans. In a large bowl, combine the dry ingredients. In a separate bowl, mix together the remaining ingredients, stirring just until combined. Pour the batter into the prepared pans. Bake until a toothpick inserted in the center comes out clean, about 35 minutes. Let cool 10 minutes in the pans, then transfer to wire racks. Glaze: Mix together the confectioner's sugar and cocoa powder in a small bowl. Stir in the soy milk or skim milk 1 tablespoon at a time until the glaze reaches a thick, pouring consistency. Place 1 cake layer on a cake stand or platter. Coat with the glaze, then top with the second layer. Spread the glaze over the top and sides of the cake. VARIATION: If you don't mind the extra calories and fat, use chocolate frosting in place of the glaze.
