Guest guest Posted May 23, 2001 Report Share Posted May 23, 2001 * Exported from MasterCook * Red Wine Cabbage Recipe By : www.vegkitchen.com 3/01 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 large onion -- cut in half and thinly sliced 5 cups coarsely chopped red cabbage 1 large sweet apple -- peeled, cored, quartered and thinly sliced 1/2 cup dry red wine 2 tablespoons apple cider vinegar 1 tablespoon honey 1/2 teaspoon salt Freshly ground black pepper 1 tablespoon unbleached white flour Serves: 6 This invitingly aromatic side dish is inspired by a Pennsylvania Dutch recipe. Heat the oil in a large saucepan. Add the onion and saut‚ over medium heat until it is translucent. Add the cabbage and all the remaining ingredients except the flour. Stir together and cook over very low heat, covered, for 25 to 30 minutes, stirring occasionally, or until the cabbage is tender but still has a bit of crunch. Sprinkle in the flour and stir it in completely. Simmer for another few minutes, uncovered, until the liquid in the pot has thickened a bit.
