Black Bean Chili Bake

Amount Measure Ingredient -- Preparation Method

1 tablespoon vegetable oil

1 cup chopped yellow onion

3 cloves garlic -- minced

1/2 cup chopped green bell pepper

3 15-ounce cans black beans -- rinsed and drained

1 14.5-ounce can whole tomatoes -- chopped

(do not drain the tomatoes)

1 8-oz can tomato sauce

1 cup flat beer

1 jalapeno chile pepper -- cored, diced (2-tbs)

1 tablespoon chili powder

1/2 teaspoon dried oregano

1/2 teaspoon ground cumin

1/2 teaspoon salt

pepper -- to taste

TOPPING SUGGESTIONS:

light sour cream

grated cheddar cheese

grated monterey jack cheese

chopped onion

lime wedges

 

PREHEAT OVEN to 350F. In a dutch oven over medium heat, warm oil. Add onion,

garlic and bell pepper. Saute until tender (5 min). Add beans, tomatoes, tomato

sauce, beer, chile and seasonings and mix well.

 

COVER and back until flavors are blended, at least 1 hour, stirring once.

 

TIP: Prepare 2 cups dried black beans for this recipe. Yield: about 5 cups
