Black Bean Dal

Amount Measure Ingredient -- Preparation Method

1 pound black beans

6 cups water

1 cup butter -- (2 sticks)

1 small garlic clove -- chopped

2 teaspoons cumin seed

1 teaspoon ground coriander

1 teaspoon turmeric

1 teaspoon paprika

1/2 teaspoon ground ginger

salt and ground red pepper

1 cup whipping cream

rice or Indian bread

 

Rinse beans in colander under cold running water. Drain well. Transfer to 6- to

8-quart pot. Add water and bring to boil over high

heat, skimming foam as it accumulates on surface. Add butter, garlic, spices,

salt and red pepper. Reduce heat to low, cover and

simmer until beans are tender, about 1 hour, adding cream near end of cooking

time (mixture should be consistency of thick soup).

(Can be prepared ahead and refrigerated 5 to 6 days. Reheat before serving.)

Serve hot with rice or bread.
