Chutney-Cheese Dip And Vegetable Platter

Amount Measure Ingredient -- Preparation Method

3 tablespoons mango chutney

2 cups yogurt cheese -- (see text)

2 cups seedless green grapes

15 baby carrots -- up to 20

3 ribs celery

cut into 3-in. strips

2 red bell peppers -- seeded

and sliced into lengths

15 low-fat herbed crackers -- up to 20

 

Serves 10.

 

Yogurt cheese makes delicious dips for family feasts. This elegant and

simple platter can be prepared up to 3 hours in advance.

 

In small bowl, mash chutney to a smooth paste.

 

Spread cheese in center of large platter. Spread chutney on top. Surround

with grapes, carrots, celery and peppers. Cover and chill up to 3 hours,

if needed. Before serving, arrange crackers alongside vegetables.
