Guest guest Posted May 22, 2001 Report Share Posted May 22, 2001 * Exported from MasterCook * Mexican Pita Pizzas Recipe By : Healthful cooking, Mary Carroll, Star Tribune 5/01 Serving Size : 4 Preparation Time :0:00 Categories : Pizza Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large whole-wheat pita breads 3 tablespoons pizza sauce -- up to 4 1/2 cup grated part-skim mozzarella cheese 1/4 cup diced canned chilies -- drained 2 tablespoons chopped cilantro 1/4 teaspoon ground cumin Serves 4. Pita breads make great pizzas or quesadillas; this is a medley of the two cultures. With a sharp knife, slice open pita breads along edges, making 4 thin rounds of bread. Lay pitas cut-side up on parchment-covered baking sheet. Spread 1 tablespoon of pizza sauce over each round. In small bowl, combine cheese, chilies, cilantro and cumin. Sprinkle over pitas.
