Guest guest Posted May 22, 2001 Report Share Posted May 22, 2001 * Exported from MasterCook * Basic Garlicky Mashed Potatoes Recipe By :Chef Frederic Van Coppernolle, French Culinary Institute Serving Size : 4 Preparation Time :0:00 Categories : French Grains, Pilafs & Potatoes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Idaho potatoes -- peeled 1 cup whole milk 2 cloves garlic -- peeled and crushed 3 ounces sweet butter Salt and pepper to taste. 1. Preheat the oven to 250 degrees. 2. Cut the potato into roughly two-inch chunks. 3. Cover the potatoes with salted water (you should be able to taste the salt in the water but it should still be drinkable) and simmer until fork-tender. 4. Drain the potatoes and place them on a baking tray in a single layer. Place them in the oven for about 5 minutes to allow some of the moisture to escape. 5. Meanwhile, in a small saucepan, place the milk and garlic, bring the milk to a simmer and cook until the garlic is tender, just a few minutes. 6. Place the potatoes in a food mill over a mixing bowl; pass the potatoes through the mill. As the crank becomes more difficult to turn, gradually pour the milk and garlic mixture through the mill and keep cranking. 7. Blend in the butter and season to taste.
