Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups basic recipe for garlicky mashed potatoes

2 egg yolks

1 cup grated Gruyère

Butter to grease the gratin pan or baking

dish and for dotting the potatoes.

1. Preheat oven to 400 degrees.

2. Blend the yolks into the mashed potatoes.

3. Place the potato mixture in a buttered gratin pan, and sprinkle the top

with Gruyère to cover it completely.

4. Dot the top of the dish with a few pieces of butter.

5. Place the pan in the oven and bake until the cheese is golden, 20 to 30

minutes.

6. To serve cut the potato dish into neat squares or rectangles, as you

would a lasagna.

The golden mountain in the name refers to the beautiful color of this baked

dish. The egg-enriched potatoes are topped with grated cheese and baked in a

gratin pan. It's so easy and yet elegant -- and surprisingly complex in its

flavors
