Veggie Salad with Sweet Corn Vinaigrette

4 cups fresh corn -- cut from cobs

Vinaigrette:

1 cup olive oil

1/3 cup white wine vinegar

1 teaspoon chili powder

4 tablespoons minced fresh Italian parsley

2 dashes Tabasco sauce

Salad:

1 English cucumber -- diced

1 red onion -- sliced

1 red pepper -- diced

1 yellow pepper -- diced

1 pound sugar snap peas -- blanched

2 cups thinly sliced baby carrots

2 cups sliced celery

 

Make the vinaigrette: Place 1 cup of the corn in the container of a blender.

(Set the remaining aside in a large bowl.) Add the vinaigrette ingredients; run

the blender on high speed for 60 seconds, or until the vinaigrette is creamy.

Set aside.

 

Make the salad: In the large bowl, combine the prepared vegetables with the

remaining corn. Pour over the vinaigrette. Season to taste and keep cold until

ready to serve.

NOTES : This mild-mannered salad is intended to accompany spicy or highly

to the vinaigrette if you want a little extra oomph.
