Guest guest Posted May 18, 2001 Report Share Posted May 18, 2001 * Exported from MasterCook * Hummus and Sauteed Vegetable Wraps Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup canned chickpeas -- rinsed and drained 1/4 cup tahini 1/4 cup water 2 tablespoons fresh lemon juice 4 teaspoons olive oil 1 tablespoon fresh chopped parsley 3/4 teaspoon minced garlic 2 teaspoons vegetable oil 1 cup diced onions 1 1/4 cups diced red bell peppers 1 1/4 cups chopped snow peas 1/4 cup chopped fresh dill (or 2 teaspoons dried) 4 10-inch flour tortillas Make the hummus: In a food processor, combine chickpeas, tahini, water, lemon juice, oil, parsley, and garlic; process until creamy and smooth. Transfer to a bowl and set aside. In a large nonstick saucepan, heat oil over medium-high heat. Add onions and saute 4 minutes or until soft and browned. Add red peppers and saute 4 minutes or until soft. Add snow peas and saute for 2 minutes or until tender-crisp. Stir in dill and remove from heat. Divide hummus equally among tortillas, spreading to within 1/2 inch of edge. Divide vegetable mixture between tortillas. Form each tortilla into a packet by folding bottom edge over filling, then sides, then top, to enclose filling completely.
