Guest guest Posted May 16, 2001 Report Share Posted May 16, 2001 This isn't vegan, and the original used meat, but I have such a weakness for black olives and feta and Greek dishes, I was compelled to format and modify it. * Exported from MasterCook * Greek Chili with Black Olives and Feta Cheese (modified) Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon vegetable oil 2 teaspoons minced garlic 1 cup chopped onions 1 cup chopped zucchini 1 cup sliced mushrooms 1 cup chopped green bell peppers 1 1/2 cups chopped eggplant 8 ounces ground beef alternative 1 19 oz can tomatoes -- pureed 1 1/2 cups stock 1 cup canned red kidney beans -- drained 1 cup canned white kidney beans -- drained 1/3 cup sliced black olives 1 teaspoon chili powder 1 1/2 teaspoons dried basil 1 1/2 teaspoons dried oregano 2 ounces feta cheese -- crumbled In a large nonstick saucepan sprayed with vegetable spray, heat oil over medium heat. Add garlic, onions, zucchini, mushrooms, green peppers, and eggplant; cook for 8 minutes or until softened. Add beef alternative and cook, stirring, for 2 minutes. Drain any excess fat. Mash 1/2 cup of the red kidney beans and 1/2 cup of the white kidney beans. Add tomatoes, stock, mashed and whole beans, olives, chili powder, basil, and oregano to saucepan; bring to a boil. Reduce heat to low and siimmer, covered, for 30 minutes. Sprinkle with cheese before serving. Note - The original recipe called for lean lamb or ground beef. I think the frozen (thawed) crumbles would work best.
