Roasted Vegetable Pasta

Amount Measure Ingredient -- Preparation Method

4 tablespoons Flora original pro·activ -- melted

1 red bell pepper -- cored

1 green bell pepper -- cored

cut peppers into thin strips

4 ounces button mushrooms -- halved

8 cherry tomatoes -- halved

12 ounces corkscrew pasta -- or similar shape

2 tablespoons Flora Light spread -- mixed with

2 tablespoons chopped fresh parsley -- and

1 tablespoon grated lemon peel

Salt and pepper

 

Brush the melted Flora Light over the pepper pieces and arrange in a single

layer on a baking tray.

 

Cook in a preheated oven 200 deg C, 400 deg F, Gas No 6 for 10 minutes.

 

Add the mushrooms and tomatoes, brush with Flora Light and cook a further 5

minutes.

 

Cook the pasta according to the packet directions and drain.

 

Stir in the parsley and lemon mix and the roasted vegetables. Season to taste

and serve immediately.

Cooking Time 15 minutes

Flora original is a heat-stable low-fat vegetable margarine; substitute

comparable or olive oil.

Flora light is a diet margarine spread that cannot be heated. Substitute similar

product (ICBINB)
