Guest guest Posted May 15, 2001 Report Share Posted May 15, 2001 * Exported from MasterCook * Roasted Vegetable Pasta Recipe By :Flora pro.activ Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons Flora original pro·activ -- melted 1 red bell pepper -- cored 1 green bell pepper -- cored cut peppers into thin strips 4 ounces button mushrooms -- halved 8 cherry tomatoes -- halved 12 ounces corkscrew pasta -- or similar shape 2 tablespoons Flora Light spread -- mixed with 2 tablespoons chopped fresh parsley -- and 1 tablespoon grated lemon peel Salt and pepper Brush the melted Flora Light over the pepper pieces and arrange in a single layer on a baking tray. Cook in a preheated oven 200 deg C, 400 deg F, Gas No 6 for 10 minutes. Add the mushrooms and tomatoes, brush with Flora Light and cook a further 5 minutes. Cook the pasta according to the packet directions and drain. Stir in the parsley and lemon mix and the roasted vegetables. Season to taste and serve immediately. Flora light is a diet margarine spread that cannot be heated.
