Guest guest Posted May 15, 2001 Report Share Posted May 15, 2001 * Exported from MasterCook * Bulgar Wheat Salad Recipe By :Flora pro.activ Serving Size : 6 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup bulgur -- soaked in 3 cups boiling water -- for 20 minutes 3 spring onions -- chopped (3 to 4) 4 ounces pineapple (reserve juice for dressing) -- diced 6 ounces cucumber (about 4 inch piece) -- diced 1 red bell pepper -- cored and diced 2 ounces cashews -- unsalted Dressing: 1 tablespoon Canola oil -- or flora oil 1/2 tablespoon white wine vinegar 1 1/2 tablespoons pineapple juice 1 Pinch ground ginger Salt and black pepper After soaking bulgar wheat, drain off any excess liquid. Mix salad ingredients together. Place dressing ingredients in a screw top jar and shake until well mixed. Pour over salad and mix well.
