Black Bean Chili

2 tablespoons olive oil

1 cup chopped onions

3 cloves garlic -- minced

1 1/2 cups chopped red bell peppers

2 whole chiles -- crushed

2 teaspoons ground cumin

1 28 oz can tomatoes with juice

1 19 oz can black beans, with liquid

1 19 oz can chickpeas, with liquid

2 tablespoons dried thyme

1 tablespoon dried savory

2 tablespoons fresh chopped parsley.

 

Serves 4 to 6. In a large skillet, heat oil over medium heat. Add onions,

garlic, peppers, and chiles; cook for 5 minutes or until soft.

 

Stir in cumin, tomatoes, black beans, chickpeas, thyme, and savory. Bring to a

boil, simmer for 5 minutes. Stir in parsley and serve.
