Guest guest Posted May 15, 2001 Report Share Posted May 15, 2001 * Exported from MasterCook * Rice, Black Bean, and Red Pepper Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups stock or water 1/2 cup wild rice 1/2 cup white rice 1 cup chopped red bell peppers 1 cup chopped snow peas 1 cup canned black beans -- drained 1/2 cup corn kernels 1/3 cup chopped red onions 1/3 cup chopped fresh coriander or parsley 1 medium green onion -- chopped DRESSING 3 tablespoons olive oil 2 tablespoons lemon juice 1 tablespoon red wine vinegar 1 teaspoon minced garlic In a saucepan bring stock or water to a boil; add wild rice and white rice. Cover, reduce heat to medium-low and simmer for 20 minutes or until rice is tender. Remove from heat and let stand for 5 minutes or until all liquid is absorbed. RInse with cold water and put iin a large serving bowl. Add red peppers, snow peeas, black beans corn, red onions, coriander, and green onion to rice; toss to combine. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, and garlic; pour over salad and toss well. For best taste, allow to chill before serving.
