Old-Fashioned Meatless Chili with TVP and Beans - TCV

Amount Measure Ingredient -- Preparation Method

7/8 c boiling water

1 c 1dried textured vegetable protein -- (TVP)

1 tbsp olive oil

1 med onion -- coarsely chopped

1 garlic clove -- minced

1/4 c chili mix

2 tsps mexican seasoning

15 ozs diced tomatoes

15 ozs tomato sauce

15 ozs chili beans with sauce

6 c cooked rice

1 c soy cheese -- shredded

 

In a small bowl, pour water over TVP; set aside until all water is absorbed,

about 5 minutes. In a large pot, heat oil over medium heat, and saute onion

until golden brown, about 5 minutes. Stir in garlic, cook until lightly

golden, 1 minute (do not brown). Stir in TVP and the remaining ingredients.

Simmer, uncovered, stirring occasonally, 20 minutes. Serve over rice and

top with soy cheese.
